Are there any affordable places to stay for a month while studying at CIA Greystone?

The Culinary Institute of America at Greystone has a listing of places that they recommend for lodging, but I thought I would see if anybody has any suggestions.  I stayed at their facilities in the past, but B & B's are actually more affordable than what it cost at the time.  This time, I'm looking to stay in the area for a month for the Wine Immersion Program.  Does anyone have any affordable suggestions?
