Chef Mathew McIntyre grew up in a small farming community outside of Stratford Ontario then began his Culinary apprenticeship at the Church Restaurant in a traditional European kitchen. After completing his apprenticeship in some of London’s best restaurants; Michaels on the Thames and Garlics, he fine tuned his skills at Christine’s Restaurant cooking at an altitude of 6000ft in the beautiful backdrop of Whistler B.C. Leaving Whistler for the sunny skies of Tucson Arizona Mathew completed a 10 month internship under famed Chef Cary Neff of the Conscious Cuisine movement at the Celebrity Health Resort Miraval Life in Balance Resort and Spa. After learning the secrets of spa cuisine and resort management Mathew then turned his attention to the Cruise Ship industry where he did a number of start up projects for Holland America Line and Royal Caribbean International including the inaugural sailing of the Radiance of the Seas. In his most recent position as Executive Sous Chef of the Liberty of the Seas, until recently the largest cruise ship in the world with over 3,600 passengers, Mathew became a member of the ACF, American Culinary Federation as a Certified Chef de Cuisine.
Mathew now owns and operates a Culinary Media company called Culinary Eclipse Studios that offers food styling and photography as well a graphic design services to the Hospitality Industry. Mathew’s most recent project is Video Recipes for the home gourmet to follow along with healthy and organic recipes.
