What in the world should I pair with my Rootbeer braised beef short ribs tonight?! Serving over noodles and also making a roasted beet salad with blue cheese. Help!

hi all,
I just picked up my organic farm veggie box from our slow food group.It has MORE BEETS! I am kinda tired of just roasting them. Any recipes? I also have kale,leeks, and gold chard,& carrots. What can I do with them before Sunday? and what wine?

Cyrus serves roasted beets with mandarins and pistachios which makes me want to try it with a lightly oaked citrusy chardonnay.

Julienned beets, goat cheese and candied walnuts is a classic first course. Try a special sauv blanc (not too grassy, more earthy with a little sweetness.)

I wonder if a sparkling rose would work?

I think I might try some beets tonight!
